Moromi Fermented Cayenne Sauce
This beautiful, well balanced cayenne pepper hot sauce is made with Connecticut-grown cayenne peppers. After harvest, the peppers are packed brine and slowly fermented to develop deep earthy, fruity notes with rich cayenne flavor and that slow kick that builds on your palate.
These hot sauces are developed to accentuate your food, not over power it. Since there are no additives and emulsifiers, this unique hot sauce should be shaken prior to serving.

Moromi is the collective effort of third generation Japanese-American author Debbi Michiko Florence, her husband, chemist Bob Florence, and their culinary partner, Chef James Wayman. Together they are using traditional fermentation techniques, koji, and the natural microbiome to transform a variety of local ingredients into handcrafted, small batch sauces.
